The Easy Nut-Free Back-to-School Lunchbox

Back-to-school season is here, which means busy mornings, packed lunchboxes, and after-school snack attacks.


At Room 5 Apothecary, we know the struggle: you want snacks that are nut-free (allergy-safe), kid-approved, quick to make, and nourishing enough to keep your little ones focused and energized.


That’s why we’re sharing one of our favorite easy nut-free back-to-school recipes that’s perfect for Wellness Wednesday—or any day you want a simple, healthy win.

🌟 Why Kids (and Parents) Love Them


✔ Nut-free & allergy-friendly – safe for school lunches

✔ Naturally sweet from fruit, no refined sugar

✔ Energizing with fiber + plant-based protein

✔ Quick to prep – no baking required

Ingredients


  • 1 cup rolled sunflower seeds (or pumpkin seeds)

  • 1 cup pitted dates (softened in warm water if dry)

  • ½ cup unsweetened shredded coconut

  • 1 medium apple, grated

  • 1 tsp cinnamon

  • 1 Tbsp ground flaxseed (for fiber & omega-3s)

  • 1 tsp vanilla extract

  • Pinch of sea salt


Directions


1. In a food processor, pulse sunflower seeds until they resemble fine crumbs.


2. Add dates, shredded coconut, grated apple, flaxseed, cinnamon, vanilla, and salt.


3. Blend until the mixture sticks together (add 1–2 tsp coconut water or water if too dry).


4. Roll into small bite-sized balls.


5. Chill in the fridge for 30 minutes before serving.




Store in an airtight container in the fridge for up to 5 days.
